CHALLENGE 9 – Thanksgiving!

I’ve always wanted to do Thanksgiving properly, and had been planning a whole menu out and what we were going to do, but since half of my house is really busy in their final year at university, the boyfriend and I both commute over an hour morning and night and one of our friends is in LA, it didn’t seem right to be doing a big meal when it would be too much to pull the uni people away from work (final week before hand-in), not enough time in the evening to prepare a ‘proper’ feast and not enough people to eat all the food even if I did have the time to get it all done! So, firstly, I’m hopeful that next year i’ll have a place that I can invite people to so that we can host a dinner and secondly, I can’t abandon ship on my Thanksgiving plans, so, I’m going to have a little fun… i’m going to make a Thanksgiving Pizza (gluten free of course!).

I am!

I’m going to use – ham, turkey, cheese, sweet potatoe puree and cranberries. And serve it up with some greens! How exciting :) Hopefully by doing this, i’ll be covering all bases, the pizza can be reheated as the boyfriend is off being designer-y tonight and attending an exhibition, so will want something when he is back, and, it’s a nice excuse for me to have some me-time in the kitchen, so i’ll have some happy music on, be feeling the festive spirit and generally, i’m going to go ahead with my Thanksgiving plans, but minus my epically proportioned original plans of Mac&CheeseSweet Potato Pie, Honey Glazed Turkey, Vegetarian Nut Loaf and other such wonders I’ve never tried. Don’t worry about the items, I still want to make them all at some point (the nut loaf next week!) So i’ll be having a spread-out Thanksgiving!

Hope you’re all making wonderful food, send me your ideas and recipes as I love festive food anyway, so I can find excuses to make it!
